How to make King Ranch Chicken Casserole
Ingredients:
2-3 cup Chicken Shredded
1 Onion Chopped
1 Bell Pepper Chopped
10 Oz. Can Rotel
2 Cans Of Fat Free Cream Of Chicken Soup
1 tsp. Garlic Powder
1 tsp. Chili Powder
8 Corn Tortillas Cut Into Fourths
¼ cup Reduced Fat Cheddar Cheese Shredded
Cooking Spray
Pepper To Taste
Instructions:
Heat the oven to 350 degrees.
Spray a skillet with cooking spray and saute the onions and peppers until softened.
Add the chicken, soup, Rotel, chili powder, garlic powder and pepper to taste to the vegetable mixture. Stir to combine.
Layer ⅓ of the tortilla pieces in the bottom of a well greased 9×9 baking dish.
Top with ⅓ of the chicken mixture.
Create another layer of tortilla pieces and then another third of the chicken.
Finish with a third layer of tortilla pieces and the remaining chicken mixture.
Top with the cheese and bake for 30-35 minutes.
