How to make Pork Ribs In Salsa Verde
Ingredients:
1 kg of pork ribs
8 green tomatoes
1 jalapeno
1 large onion
2 garlic cloves
2 coriander sprigs
2 bay leaves
Olive oil, Salt and Pepper to taste
Instructions:
Wash and cut the ribs into small pieces.
Take them to a pot.
Add some of the onion, 1 garlic clove, 2 bay leaves, 1/2 tablespoon of salt, and enough water to cover all ingredients.
Bring the water to a boil over high heat.
When it starts to boil, reduce to medium heat, cover and leave the ribs cooking for 1 hour until the meat is soft.
Salsa Verde
Add the tomatoes and the Jalapeño pepper to a saucepan; add water to cover ingredients.
Cook over high heat for 10 min.
Pass this mixture to the blender and add the other half of the onion, 1 garlic, the cilantro and season.
Blend the ingredients very well and reserve.
Take the ribs out of the pot, put them in a colander and remove the excess water; at the end book.
Heat 1 tablespoon of oil in a skillet.
Put the ribs you cooked in the pan and fry them for a few minutes, until they are lightly golden.
Add the green sauce that was blended. Mix everything together, cook for a few minutes and serve.
