Apple Filling Bread Pudding

How to make Apple Filling Bread Pudding

Ingredients

4 eggs, beaten

1 cup plain or vanilla yogurt

1 cup whole milk

2 tsp cinnamon, divided in half

½ tsp nutmeg

½ cup + 2 tbsp sugar

8 cups bread, cubed (I use a combination of all breads I have at the time)

3 to 4 apples, peeled, cored and cubed

Sauce:

1 cup butter, unsalted

1 cup light brown sugar

1 cup heavy cream

Instructions

Preheat the oven to 350*

Lightly spray a 9×13 baking pan

In a bowl combine the eggs, vanilla yogurt, milk, cinnamon, nutmeg and ½ cup of the sugar. Whisk together thoroughly

Stir in the apples and the raisins

Gently fold in the cubed bread

Put the mix into the prepared pan

In a small bowl, mix together the remaining sugar and 1 tsp of cinnamon, stir to blend

Sprinkle over the bread mix in the pan and place pan in the oven

Bake for 35 to 40 minutes

While the pudding is baking make the sauce for on top

In a saucepan, melt the butter and add in the brown sugar

Cook on low until the sugar is dissolved

Whisk in the heavy cream and simmer until it thickens, stirring occasionally.

Remove the pan from the oven and let sit for 10 minutes

Pour the sauce over the top of the bread pudding

Top with a scoop of vanilla ice cream if desired and serve.
