How to make Easy Mexican Street Corn
Ingredients
6 ears of corn, unshelled
6 tsp unsalted butter
¼ cup crumbled Cotija cheese
¼ cup chopped fresh cilantro
2 teaspoons chili powder
2 limes, juiced
Instructions:
Preheat oven 350 degrees F (175 degrees C).
Place the corn, in balls, directly on the oven rack.
Roast in preheated oven until tender and cooked through, 40 to 45 minutes.
Peel the husks and rub each cob of corn with 1 tablespoon of butter. Sprinkle each with Cotija cheese, cilantro, chili powder and lime juice. To serve.
