Fried Shrimp

How to make Fried Shrimp

Ingredients

canola oil

2 large eggs, scrambled

1 cup whole milk

2 tablespoons hot sauce (like cola)

2 lb large raw deveined shrimp, peeled and deveined

3/4 c all-purpose flour

2/3 cup (about 2 7/8 ounces) cornmeal

1 1/2 teaspoons kosher salt

1 teaspoon black pepper

1/2 teaspoon cayenne pepper

To serve: lemon slices, cocktail sauce, remoulade (optional)

Instructions:

Pour oil to a depth of 2 inches in a large frying pan; Heat above medium to 370 degrees Fahrenheit.

While oil heats, whisk together eggs, milk and hot sauce in shallow dish; Add the shrimp to the mixture and stir until coated.

Whisking flour, cornmeal, salt, black pepper & cayenne pepper in separate shallow dish.

Remove 6-8 shrimp from egg mixture, shaking off excess. Weasel in the flour mixture.

Put the crushed prawns in the hot oil. Fry until coating is golden brown and crispy, about 2 minutes.

Lift with a slotted spoon onto a baking sheet lined with paper towel. Repeat with remaining shrimp, returning oil to 370°F over medium-high heat before adding each batch of shrimp.
