How to make Mexican Casserole
Ingredients
1 pound lean ground beef
15 ounce can ranch-style beans
1 can diced tomatoes and green chilies, drained
1 can condensed cream of mushroom or chicken soup
12 ounce package corn tortillas
4 cups shredded cheese
3 tablespoons Taco Seasoning
1 bag Tortilla Chips on the side if desired
Instructions
Step 1: Preheat the oven
Preheat your oven to 350°F (175°C). Lightly grease a 13×9-inch baking dish and set aside.
Step 2: Cook the beef
In a large skillet over medium-high heat, cook the ground beef until browned and crumbly. Drain off excess fat if desired to keep the dish lighter.
Step 3: Prepare the filling
Stir in the taco seasoning, ranch-style beans, drained tomatoes with green chilies, and condensed soup. Mix thoroughly and let the mixture simmer for a few minutes until heated through and well combined.
Step 4: Layer the casserole
Spread 1 cup of the beef mixture evenly across the bottom of the prepared baking dish.
Arrange a single layer of corn tortillas over the mixture.
Spoon half of the remaining beef mixture over the tortillas and spread evenly. Top with a generous layer of shredded cheese.
Add another layer of corn tortillas.
Spread the last portion of the beef mixture on top, then finish with the remaining cheese.
Step 5: Bake
Bake uncovered for 30 minutes, or until the casserole is bubbling and the cheese is melted and golden.
Step 6: Serve
Allow the casserole to cool for about 5 minutes before slicing. Serve warm with tortilla chips on the side, if desired.
