How to make Strawberry Sheet Cake Recipe
Ingredients
2 cups granulated sugar
1 cup butter, softened, and unsalted
2 eggs
2 tsp lemon juice
½ tsp vanilla
½ tsp baking soda
¼ tsp salt
1 cup buttermilk
3 tbsp strawberry gelatin mix
2 ½ cups flour
2 ½ cups diced strawberries
Frosting:
8 ounces cream cheese, softened
⅔ cup confectioner’s sugar
1 ½ cups heavy whipping cream
2 tbsp fresh lemon juice
¾ cup diced strawberries
Instructions
Preheat the oven to 350*
Spray a 9×13 baking pan and line with a sheet of parchment paper
Using an electric mixer, cream the butter and the sugar until it is light and fluffy
Add the eggs one at a time beating between each
Beat in the vanilla and the lemon juice
In a small bowl, combine the gelatin mix, baking soda, salt and flour
Add the flour mix to the first bowl a little at a time, alternate with adding the buttermilk
Mix until well incorporated
Fold in the diced strawberries
Pour the batter into the prepared pan and smooth it out
Bake for 35 minutes and test with a toothpick to check for doneness
Cool in the pan on a wire rack for 30 minutes
Remove cake from pan using the parchment paper, turn cake over on the wire rack to finish cooling
In a medium bowl, beat the cream cheese and half of the confectioner’s sugar
Add strawberries and beat until just mixed
Beat the cream and lemon juice until light and foamy
Add in the remaining sugar and beat until stiff peaks form
Cover the sides and the top of the cake with the frosting.
