How to make Tex Mex Beef Skillet

Ingredients:

1½ pound of ground beef

1½ cup of brown or white rice

1 cup of frozen corn

15 ounces can of Rotel, drained

½ cup of canned black beans, drained and rinsed

½ cup of green onion, chopped

2 tbsp of green onion, chopped, for topping

½ cup of sharp cheddar cheese, shredded

Homemade low sodium taco seasoning or store-bought

2 tbsp of Mrs. Dash seasoning

1¼ tsp of chili powder

1 tsp of onion powder

1 tsp of garlic powder

Directions:

Place a skillet pan on a stove over medium heat, then add in the ground beef, cook it until it turns brown. Drain all of the excess fat if needed.

Season it with a homemade taco seasoning but you can also use store-bought if preferred, then add in the chili powder, onion powder, garlic powder, and Mrs.

Dash seasoning. Give it a good mix, then add in the frozen corn and Rotel, mix them together until well combined. Add in half a cup of chopped green onions and beans, then mix them well.

Once it’s mixed well and it has cooked for about 5 minutes, you can start adding in the cooked rice, you can use rice that you made the day before and refrigerate.

Continue mixing and folding the ingredients together until it’s nice and well combined. Let it cook for about 5 minutes or more, then turn off the heat.

Once done, top it with more green onions, but this is optional. Sprinkle the cheddar cheese on top as well.
