How to make Blackberry Cobbler
Ingredients
2 ½ cups of blackberries
1 cup water
1 ¼ cup sugar divided
1 ½ cups Bisquick baking mix
1 tsp vanilla
1 cup milk
½ cup butter, unsalted and melted
Instructions
Preheat the oven to 350*
Lightly spray the baking pan with nonstick spray
In a saucepan on the stove place the blackberries, ¼ cup sugar and the water
Stir to mix, cook on medium high heat until the berries begin to soften and the sugar is dissolved
In a mixing bowl combine the Bisquick, milk, remaining sugar and the vanilla
Stir to combine into a dough
Pour the melted butter in the bottom of the baking dish
Spoon the berry mixture into an even layer over the butter
Spread or spoon the Bisquick batter over the blackberries
Bake for 30 to 40 minutes. The biscuit batter should be a light brown
Set to the side and allow to cool
Serve with a scoop of vanilla ice cream or a good dollop of whipped cream topping
This could also be served warm with a scoop of vanilla bean ice cream, or whipped cream.
