Pickled beets are easy to make with freshly cooked beets and a brine made with sugar, pickling salt, and vinegar. They can last up to 6 weeks and always be a ready healthy snack!
How to make Pickled Beets
Ingredients:
10 lb beets
2 cups vinegar
2 cups sugar
2 cups water
1 tsp salt
1 teaspoon pickling spice
2 teaspoons whole cloves
Instructions:
Wash and cook the beets until the center of the beet is tender. Peel, then cut into pieces about 1 inch in diameter. Place the pieces in hot, sterilized marinade jars.
In a cauldron, add vinegar, sugar, water and salt. In a piece of cotton cloth, add the pickling spices and whole cloves. Close the fabric so that the spices do not come out. Put in the cauldron of vinegar. Boil 5 minutes.
Pour the liquid over the potted beets.
Close the pots and boil them for 10 min
