Homemade Arroz Con Pollo and Corn
Ingredients:
1 Fryer (whole chicken)
1tsp comino (cumin)
1tsp salt
1/2tsp pepper
1/4tsp garlic salt
1/4c oil
1c long grain rice
3 corne
Bouillon tomato flavor
Tomato sauce:
Chopped tomatoes
Chopped onions
Chopped bell pepper
Water
Instructions:
Chop fryer however you like (I don’t use the bottom part of the chicken). Add to large, deep pan and cover with water and let boil until cooked. When cooked, remove and set aside.
Drain and rinse pan used for chicken and add the oil and rice. Once it’s starts to brown, add vegetables and seasonings (NOT BOUILLON).
Then add tomato sauce, water and bouillon and bring to boil. Then add chicken back and let cook until rice is done. *never stir, let that cooked*
Serve with tortillas and charro beans.
