Salsa Chicken And Rice Casserole

How to make Salsa Chicken And Rice Casserole

Ingredients

4 cups chicken, shredded

4 ½ cups rice, cooked

1 can cream of chicken soup

1 can cream of onion soup

2 cups Taco blend cheese, shredded

2 cups Cheddar Cheese, shredded

⅓ cup green onion

1 ½ cups salsa

Instructions

Preheat the oven to 350*

Cook the rice according to package directions

Spray a 9×13 baking pan with non stick spray

Spread 2 ¼ cups cooked rice at the bottom of the pan

Spread half of the chicken on top of the rice

In a mixing bowl combine the cream of chicken soup, the cream of onion soup, the salsa and the green onion until it is well combined

Spread half of the soup mix over the shredded chicken

Sprinkle half of the cheese(1 cup taco blend and 1 cup Cheddar) over the soup mix

Repeat with the remaining rice, then the shredded chicken, the other half of the soup mixture and the remaining cheese over the top

Place in the oven and bake for 40 minutes

Let cool for 10 minutes

Top with just a light sprinkle of cheese and additional green onions for garnish if desired.
