How to make Pecan Praline Sweet Potato Cake

Ingredients

1kg sweet potatoes

200g brown sugar

260g Flour

100g melted butter

4 eggs

For the streusel:

80g Butter

100g brown sugar

100g Flour

60g Pecan nuts

1 tbsp. tbsp icing sugar

Instructions:

Preheat oven 180°C (th.6). Peeled sweet potatoes, rinse them & cutting them into pieces. Boil them in boiling water for 15 minutes. Drain and mash them. Whisk in melt butter, flour, sugar & eggs.

Line 22cm square mold with paper baking. Pour preparation and bake about 30 min.

Preparing streusel: coarsely chopping pecans. In bowl, mixing butter and the brown sugar to obtaining coarse sand. Adding flour also then walnuts. Spread on the baking sheet lined with baking paper. Bake for 15 mins. Letting streusel cool, & coarsely chop it.

Taking cake out of oven & letting it cool. Cutting it to cubes & garnish with streusel. Serving dusted with icing sugar.
