How to make Baked Mozzarella Stuffed Meatballs

Ingredients

1 pound lean ground pork

½ pound lean ground beef

1 tbsp fresh Italian seasoning

1 egg

1 tbsp fresh chopped parsley

Salt and pepper to taste

4 Mozzarella Cheese Sticks, cut into thirds

Sauce:

14 ounce can crushed tomatoes

½ small yellow onion, chopped fine

1 clove garlic, freshly minced

1 tbsp parsley

Salt and pepper to taste

Instructions

Sauce first, place some Olive oil in a skillet

Add in chopped onion and saute for 5 minutes, until the onions are soft and translucent

Add the minced garlic and the can of chopped tomatoes

Stir in the parsley and the salt and pepper

Simmer on low for 20 minutes

Preheat the oven to 400*Line a baking tray with parchment paper

In a bowl combine the pork and beef, the egg, and the seasonings

Mix together completely

Grab a golf ball sized amount of meat mixture and roll into a ball

Place one piece of the cut mozzarella cheese stick into the center

Roll the meat around and be sure to seal so the cheese does not seep out when cooking

Continue until all the meat is rolled and cheese in the center of each.

Place the baking tray into the oven and bake for 20 minutes, until the meat is cooked through

Place the fully cooked meatballs into the marinara sauce and simmer for 20 minutes, stirring twice throughout.
