Ingredients
3 tbsp Olive Oil, divided in half
2 pounds of cubed beef, chuck or stew meat
1 small white onion, sliced
3 cups of beef stock
1 packet french onion soup mix
1 ½ tbsp Worcestershire Sauce
Salt and pepper to taste
⅓ cup water
2 tbsp cornstarch
1 Bay leaf, optional
Fresh parsley for garnish
Instructions
In a 5 quart pot place 1 tbsp of Olive oil and add in half of the cubed beef and half of the onion
Once cooked, remove from the pan and set to the side, repeat with the remaining beef
When the beef is done cooking, add the other half back into the pan and add in the beef stock, onion soup mix, Worcestershire Sauce and the bay leaf, optional. Salt and pepper to taste.
Place a cover on the pan, lower the heat to a simmer and simmer for 1 ½ hours
In a small bowl, mix the cornstarch into the water, and stir until the cornstarch is dissolved
Slowly add this to the pot with the beef stock and stir, it will begin to thicken quickly, roughly 2 to 3 minutes, stir constantly.
Sprinkle with the parsley just before serving.
