Super Nacho Platter
How to make Super Nacho Platter
Ingredients:
°1 tbsp. olive oil
°Whole Yellow Onion, diced 2 lbs.
°ground beef 1/2 tsp.
°chili powder 1/2 tsp.
°1/2 teaspoon paprika
°cumin 1/4 tsp.
°crushed red pepper 1/2 tsp.
°salt 1/2 tsp.
°pepper 1
°can (14.5 ounces) pinto beans, chili, or ranch beans 1/2 c.
°Hot water
°tortilla chips 1 1/2 c.
°grated cheddar cheese 1 1/2 c.
°monterey jack cheese 6
°1 whole Roma tomato, diced
°Whole jalapenos, finely chopped 1/2
°A handful of chopped coriander leaves
°juice of 1 lemon 1/2 tsp.
°salt 1
°Whole avocado, pitted and cut into cubes
°sour cream (optional)
Instructions:
In a skillet over medium heat, add the olive oil and a generous portion of the onion. Cook it until tender, then add the minced meat. Cook the meat until it is completely cooked through, and then aim for the fat. Add the bean stew powder, paprika, cumin, crushed red pepper, salt, and pepper and mix well. Add the beans and boiling water and mix. Reduce the temperature to low and cook while preparing the various fixings.
To make pico de gallo, combine the other part of the onion with the tomatoes, jalapeños, cilantro, lime juice, and 1/2 teaspoon salt. Mix it together and put it away.
To make the nachos, place a layer of tortilla chips on a plate or plate. Layer with the meat/bean mixture, then at this point all but 1/4 cup of the cheddar. Add another layer of chips, another layer of the meat/bean mixture, and Monterey Jack cheese. Add a final small layer of chips, then at that point a small layer of hamburger and beans, and then, at that point, a final sprinkling of cheddar cheese.
Microwave the additions 45 seconds until the cheddar is tender and fizzy. (You can also place the dish in a 325-degree stove if it’s heatproof. Simply let it sit until the cheddar has softened.)
