Famous Chicken Carbonara

How to make Famous Chicken Carbonara

Ingredients

1 pound chicken breast, boneless and skinless

3 strips of bacon, cooked and drained

1 tbsp butter

Salt and pepper to taste

½ tbsp Olive Oil

1 small onion diced

3 cloves garlic, minced

2 Laughing Cow cheese wedges

½ cup low fat half and half

⅓ cup Parmesan cheese, grated

1 cup frozen peas

1 ½ cups bow tie pasta, cooked according to package directions

1 cup chicken broth

1 tbsp water

1 tbsp cornstarch

Parsley, optional as garnish

Instructions

Cook bacon and set aside

Cook the pasta and drain

In a skillet, cook the chicken in the butter for 5 to 6 minutes on each side.

Set to the side to cool, then cut into 1 inch bite size pieces

In the same skillet, add the garlic, onion, and oil. Cook until the onions are just a little crispy, not burned

Add in the cheese wedges, the half and half and the chicken broth, whisk together until the cheese melts

Add in the drained pasta, peas and parmesan cheese

In a small bowl combine the water and the cornstarch

Mix into the skillet until the sauce begins to thicken

Crumble the bacon, add in the chicken and the crumbled bacon to the skillet and stir to combine well

Sprinkle with parsley to garnish

Serve and Enjoy!
