¼ teaspoon of Baking Soda 1.25 grams
6 cups of Sugar divided (1200 grams)
2 cups of heavy cream 480 ml
½ cup of unsalted Butter 113 grams
1 ½ cups of Pecans chopped (180 grams)
INSTRUCTIONS
FIRST STEP:
Begin by generously greasing a 9×13 pan, ensuring that every inch is coated to prevent sticking.
In a saucepan with a sturdy bottom, place 2 cups of sugar.
Cook over low heat, stirring continuously, for about 20 minutes until the sugar melts and becomes golden.
SECOND STEP:
Once the first batch of sugar has melted, add the remaining sugar and heavy cream to the saucepan. Continue stirring constantly.
Increase the heat and cook until the temperature reaches 244°F (118°C) using a candy thermometer.
Remove the saucepan from the heat and stir in the baking soda until it is thoroughly combined.
Add the vanilla and butter to the mixture and continue stirring until the butter melts completely and the mixture becomes smooth.
Allow the mixture to rest for 20 minutes. This time allows the flavors to meld together.
Stir in the chopped pecans until the sheen disappears and the mixture is evenly distributed.
THIRD STEP:
Transfer the mixture to the prepared greased pan, spreading it evenly.
Allow the candies to cool for 1 to 2 hours, or for best results, overnight.
Once completely cooled and firm, cut the candies into small squares and serve.
